That serene sea of green is busily harvesting sunlight and converting (photosynthesis) it to energy for use by the trees.  Much of that energy and goodness is stored within each pecan kernel- high in antioxidants, oleic acid, dietary fiber and packed with over 19 vitamins and minerals- including vitamin A, vitamin E, folic acid, calcium, magnesium phosphorus, potassium, several B vitamins and zinc.  Pecan are also a natural, high quality source of protein that contain very few carbohydrates and no cholesterol.  For more information about the nutritional benefits of pecans, visit www.ilovepecans.org.
